California coffee shops

With the end of World War II, the United States became the undisputed world power as well as the leading economy, producing the largest share of the world’s goods.

Many changes took place in American society as the soldiers returned. Suburbs sprang up with housing for growing families, shopping centers appeared, and many workers enjoyed prosperity. And a new type of eating place came into being, known as the “California coffee shop.” There had been coffee shops before that, but Southern California introduced new features, particularly in terms of design.

Triumph at the war’s end was celebrated with ticker-tape parades, but also in the design of cars and buildings, including the exuberant design of coffee shops in Southern California. The style of restaurant buildings that has also come to be known as “Googie” was modern, but without the severity of International Style. It used a wide range of materials developed in wartime, and forms inspired by the angles of fighter planes, the energy of the atom, and the bursts of bombs.

The inspiration for the striking designs of California coffee shops – known as Coffee Shop Modern – is frequently attributed to the space age, but over time the realization has grown that it was equally inspired by U.S. world ascendancy rooted in warfare. It may seem strange to attribute inspiration for a sprightly and bright type of architecture and interior design to something as ominous and deadly as the bomb, but a number of writers have made this connection.

In the words of Michael Sorkin’s essay “War is Swell” [in World War II and The American Dream, 1995]:
“That the atom so readily became a chipper symbol of American modernity in the immediate aftermath of its use as the greatest instrument of mass death in human history speaks volumes about the relationship of the accomplishments of war to the formal culture of peace. The decor of the fifties is all bursts and orbits, nuclei and energetic spheres. The atom was fully relegated to the class of things, isolated from life.”

Elements of coffee shop design can be seen in the look of automobiles of the same time. Some of the striking elements of California coffee shop design were echoed in the fins of Cadillacs inspired by the P-38 fighter plane. In Googie Redux, author Alan Hess, who has been largely responsible for recognition and appreciation of the creativity of Coffee Shop Modern, notes that Time Magazine called the 1959 Cadillac design the “ICBM [Intercontinental Ballistic Missile] look,” and also that “The Olds Rocket, the Olds Cutlass, and the Buick LeSabre were all names borrowed from aeronautics.”

The design of coffee shops was nicknamed “Googie” after architect John Lautner’s 1949 unique Los Angeles creation bearing that name. It featured expansive glass window walls, unusual angles and roof lines, prominent signs, and bright colors. [partial view shown above — it extended farther to the right]

The vocabulary of Coffee Shop Modern signals its inventiveness. Terms in a glossary by Alan Hess in his book Googie Redux include: amoeboid, boomerang, cantilevered canopy, diagonals, dingbat, flagcrete, folded plate roof, free form, hyperbolic paraboloid, starburst, steel web lightener, structural truss, and tapering pylon.

California coffee shops, often bearing nicknames of their owners (Norm’s, Biff’s, Ship’s, Hody’s, Sherm’s, etc.), were casual, unpretentious, comfortable, moderately priced, and open 24 hours. Compared to the inexpensive eating places of the Depression, they offered a cheerful example of luxury for the masses, or what has been termed “populuxe” (See Thomas Hines’ book of the same name). Contrary to the usual negative public reaction to modern architecture, the upstart designs of the coffee shops were well accepted.

Counter seats were usually spaced generously and built with cantilevered supports allowing for unobstructed floor cleaning. [see above] Many had walls of decorative stone. A 1955 news story about the newly built Carolina Pines Jr. at LaBrea and Sunset noted its imported Italian mosaic tile columns, Palos Verde stone walls, and custom-designed wall plaques, among other features. It also had a carpeted dining room and an outdoor patio eating area in a garden protected from road noise and dirt with decorative fencing. [see below]

The coffee shops also introduced exhibition cooking. Although Eastern diner-style eateries had long done their cooking in sight of patrons, coffee shops introduced stylish designs and materials to the cooking areas and kept them sparkingly clean.

And, oddly enough, considering that the coffee shops were open all night, many of them had cocktail lounges.

Coffee shops designed along the lines of Southern California’s soon spread across the country. In St. Louis there was the Parkmoor, Cleveland had Manners, and Denny’s, with its beginnings in California, flourished everywhere.

Of course, as was true with neon signs, there were critics, notably Peter Blake in his 1964 book God’s Own Junkyard. He lumped Googie-style designs with neon, billboards, subdivisions, and a general decline in the built environment.

Starting in the mid 1960s but gaining in the 1970s Googie style was rejected, and what has been dubbed the “browning of America” by Philip Langdon had begun. Now chain restaurants of the coffee shop type began featuring earth tones, mansard roofs, exposed wooden beams, hanging plants, and subdued lighting. The coffee shop type of suburban restaurant continued in chains such as Denny’s despite competition by fast food establishments. McDonald’s, which had itself begun with Googie styling, toned down its buildings.

The change was due in part to the Vietnam War, but I can’t help but wonder if Americans hadn’t already become disenchanted with power and wealth based on military might.

Odd restaurant buildings: “ducks”

Ducks are commercial buildings that look like what they sell, as illustrated by the Freda Farms ice cream stand in Berlin CT. The term was actually inspired by a Long Island store that sold ducks (to eat). It has been generalized to apply to any buildings that looks like some familiar object or animal, etc, whether or not their merchandise is related. These types of buildings are also known as programmatic or mimetic architecture.

duckstamaleThough they reached a peak of popularity in the late 1920s and early 1930s, ducks trace back much further in history. An introduction to Jim Heimann’s book California Crazy by David Gebhard links the mimetic architecture of the last century to garden buildings of the 18th century and even earlier. One of the first examples in the United States was the 65-foot elephant of Margate NJ built in1881 to attract attention to a real estate development.

In addition to housing stores and offices, many ducks have featured restaurants over the decades. They have taken the shape of all kinds of animals, kegs, barrels, ships, castles, cups, coffee pots, bowls, hats, chuck wagons, dirigibles, items of food, shoes, and windmills.

The earliest restaurant duck I have found was a café planned for Cincinnati in the shape of a huge beer cask in 1902. Unlike later examples, though, it was meant to occupy a location in a row of Main Street storefronts. Most later ducks, arriving with the spread of car ownership in the late 1920s and early 1930s, occupied empty lots in developing areas of cities. Not too surprisingly, southern California’s car culture provided a nurturing environment. In addition the climate was favorable to the somewhat makeshift carnival-type structures, while the city’s movie industry supplied inspiration. As Los Angeles grew, giant dogs, toads, ice cream freezers, shoes, and other bizarre apparitions sprang up along the roadside, vying for the business of passing motorists.

The link between the movie industry and roadside fantasy was straightforward in the case of Harry Oliver, a leading designer who brought magic to sets for movies such as Scarface, The Good Earth, and Mark of the Vampire. Oliver designed windmill-shaped buildings for the Van de Kamp bakeries and drive-ins as well as a storybook building occupied by the Tam o’ Shanter Inn.

If architecture is about the enclosure of space, ducks are architecture only secondarily. In most cases mimetic architecture describes a building that serves more as advertising sign than as an innovative enclosure of space. Once a customer stepped inside a giant pig or coffee pot, all whimsy faded away as the interior revealed itself to be a standard rectangle as shown here in one of the many coffee-pot ducks that could be found across the U.S.

Toddle House

The Toddle House chain occupied “cozy cottage” style buildings that were quite popular as restaurants, gas stations, and cabin camps in the Depression. On the outside Toddle Houses projected an exaggerated Colonial doll-house version of domesticity, with two oversized chimneys and a primly manicured lawn.

toddlehouseinteriorca1939Inside, though, a very functional, almost clinical interior greeted customers: A back wall of stainless steel kitchen equipment, a counter with a dozen comfortless, backless stools (“in and out in 12 minutes”), bare windows, bathroom-tile wainscoting, and NO fireplaces. Open 24 hours, their menus were limited and featured hamburgers and breakfast at all hours.

ToddleHouseStedmanpatentAdding another touch of no-nonsense modernity was the “cashier machine” invented by founder and co-owner J. C. Stedman. Designed to keep the countermen (later women) from handling money, a mechanical box near the door received meal checks and payments in coins. After a counterman observed, via a mirror inside the box, that the customer had deposited the correct amount, he lifted a treadle behind the counter and the money and checks fell through trap doors into locked bins below (nos. 14 and 15 in the patent diagram).

As awkward as the contraption was – not giving change, easily circumvented by cheating employees, etc. – it remained in use at least until the 1940s and customers liked it. In Evanston IL customers felt let down, their trustworthiness in doubt, when the cashier machine was replaced by a standard cash register in 1945. Today, the old drop box system — in my view mistakenly considered an honor system — has become an object of nostalgia.

The first Toddle Houses were opened in Southern states, principally Texas and Tennessee, in the 1930s. The chain never made it farther west than Omaha. In 1945 the company expanded northward with the acquisition of 46 Hull-Dobbs Houses, which resembled Toddle Houses to a remarkable degree. Toddle Houses built later were larger and of a style referred to as “New South” shown here that was plainer and even more symmetrical. Some had dining rooms and the front entrances with copper-clad canopies were enclosed by glass vestibules.

In 1946 Toddle Houses created Harlem House, for Black customers who were not otherwise welcome. Eventually there were 12 such units in Memphis, the company’s headquarters. An Atlanta Toddle House was the site of a prominent civil rights sit-in demonstration in December of 1963, in which demonstrators including comedian Dick Gregory were taken to jail.

The original 24 × 12-ft Toddle Houses were prefabricated and shipped to their sites on flatbed trucks. It has been reported that their exteriors were of porcelain-coated steel for portability. Since this material is inappropriate for Colonial architecture and they do not appear to be shiny in pictures, I find the description given in Philip Langdon’s Orange Roofs and Golden Arches more convincing. He says that some Toddle Houses were “veneered with a cement coating scored to resemble brick.” Others were built of brick on site. Langdon also observes that because early Toddle Houses could be transported so easily, the possibility of moving them presented advantages when negotiating land leases. I discovered a number of them that were in fact moved.

In 1962 the Toddle House company was bought by Dobbs House which turned most of them into Steak N Egg Kitchens. In the 1980s, after another company, Carsons, bought out Dobbs, an attempt was made to revive the Toddle Houses, which by 1984 had dwindled to 11 units. Carsons built at least 45 new Toddle House units.

Though Toddle Houses no longer exist, many of the buildings continue as eating places or have been adapted for other uses, as shown in a blogpost by Dinerhunter.
